Mezcal on Your Bar and Restaurant Menu
In short

a good mezcal section needs clarity, not a long list. Start with three to five mezcals ordered from light to intense, describe each with agave, origin and two or three flavor notes, offer 1 to 1.5 oz pours, a tasting flight and two or three house cocktails. And train your staff to recommend.

Why put mezcal on the menu?

  • Guests are looking for artisanal spirits with a story.
  • Well-presented mezcal sells both neat and in cocktails.
  • It gives the menu a Mexican identity and starts conversations.

How many labels, and which?

Three or four well-chosen labels cover almost everything. Better to rotate a few than to leave many sitting on the shelf.

How to describe each mezcal

One line per label, always in the same format:

Agave, origin, three notes and strength. No jargon.

Pours, service and flights

  • Pour: 1 to 1.5 oz, in a copita or veladora, with orange and worm salt.
  • Tasting flight: three small pours from light to intense (for example, ZUNTE and ZUNTE Gold). An easy way for guests to explore and raise the check.
  • House cocktails: two or three recipes using the entry mezcal. The ZUNTE site has ready-to-use recipes.

How to train your staff

  1. Everyone tastes every mezcal on the menu.
  2. They know three things per label: agave, origin and one flavor trait.
  3. They can recommend: “Would you like something smooth or more intense?”
  4. They explain how to drink it: in sips, at room temperature.
