Our Journey

From a remote, narrow valley in the mountains of Oaxaca, Mexico, filled with Maguey Espadin on its steep slopes,
emerges a unique blend of history, flavor and tradition.

OUR PROCESS

AGAVE

Our 100% Espadín Agave
is harvested by hand
when it is 8 years old and
perfectly ripe.

PIÑA

Next is the “Jimar” process,
where the hard pointy
leaves of the agave plants
are carefully cut off, leaving
the Heart of the Piña.

CONICAL OVEN

The Piña is then
roasted in a traditional
conical-shaped
earthen stone oven
for 5 days.

STONE MILL

The Piña is then
crushed by a
traditional stone
Tahona Wheel.

FERMENTATION

The crushed Piña is then
placed in traditional
wooden barrels with
crystaline water to ferment
for 8-10 days.

COPPER STILL

The fermented agave
is distilled 3 times over
the next 35 hours in a
Copper Still.
