Ensamble vs. Single-Agave Mezcal

a single-agave mezcal is made from one species (for example, 100% Espadín) and shows that plant's pure character. An ensamble blends two or more species for a more complex profile. Neither is better by default; they are different styles. ZUNTE is 100% Espadín; ZUNTE Gold and ZUNTE Swarovski® are ensambles of wild Tepeztate and high-altitude Espadín.

What is a single-agave mezcal?

One made from a single species. The most common is Espadín (Agave angustifolia), which matures in about 6 to 8 years and gives fruity, herbal, balanced profiles. There are also single wild-agave mezcals, such as Tobalá or Tepeztate.

What is an ensamble?

A mezcal made from two or more agave species. The piñas can be cooked, fermented and distilled together, or made separately and blended afterward. The goal is to combine the best of each plant: body and sweetness from one, floral or spicy notes from another.

Why Tepeztate with Espadín?

Tepeztate (Agave marmorata) is a wild agave that grows on rocky slopes and can take 15 years or more to mature. It brings intense green, floral and spicy notes. Espadín adds structure, sweetness and roundness. Together they balance wildness with approachability.

What does the label say?

Mexico's NOM-070-SCFI-2016 requires the label to state the agave species used. If you see “ensamble”, look for which agaves it contains; a single name means single agave.

Which one to choose?

  • New to mezcal or making a cocktail: an Espadín like ZUNTE (40% ABV).
  • Sipping neat, gifting or celebrating: an ensamble like ZUNTE Gold (40% ABV).

FAQ

Is an ensamble lower quality?

No. It is another way to express agave.

Is an ensamble more expensive?

Often, when it includes wild agaves, which grow slower and yield less.

Can any agave go into an ensamble?

Those permitted by NOM-070 within the Denomination of Origin.
